Chefs from across the state joined Governor Martin O'Malley in kicking off the Third Annual "Buy Local" Cookout. The cookout, which encourages all residents of Maryland to use more locally-grown products in their meals, involves top-notch Maryland chefs utilizing their culinary skills to create exceptional meals using local products.

Among these top tier chefs was UMES' Hotel and Restaurant Management Instructor, Chef Susan Callahan who prepared a Black Currant and Onion Conserve. She incorporated many local products in the recipe for this decadent appetizer including: goat cheese and sausage, black merlot vinegar and currants.
